For years I've heard Londoners rave about Nando's peri-peri chicken, but I've never gotten the chance to taste it. If you're in the same boat, or craving something spicy and delicious, yet healthy, then this is just the treat for you!






This is a recipe I adapted straight from the Nando's website, but added a few little elements of my own!

Unfortunately, they don't sell Nando's sauces around my area, so I improvised and made one of my own. (Being Portuguese definitely gives me a one-up)

I'm going to share what I used to make enough sauce for just one pizza (using one chicken breast), but you could definitely double or triple the recipe for whatever you need!





Ingredients:
  • 1 chicken breast, marinated and cooked in peri-peri sauce
  • Fatbread (I used the Multi-Grain with Flax flatbread by Flatout)
  • Hummus
  • Spinach
  • Feta cheese
  • Lime
  • Cilantro
  • Garnish: olive oil, peri-peri sauce, crushed red pepper

Peri-Peri Garlic Sauce:
  • 2 tbs Sriracha
  • 1 garlic clove, minced
  • 2 tbs olive oil
  • 1 tbs garlic powder
  • 1/2 lemon (juice)
  • 1 tsp cider vinegar
  • 1 tsp paprika
  • Pinch of cayenne pepper
  • Chopped cilantro
*(I just winged the sauce, so feel free to adjust to your taste)

To cook chicken, start by preheating the oven to 400° F. Layer a baking dish with tin foil and spray with cooking spray (or brush with olive oil). Place chicken marinated in peri-peri sauce in baking dish and cook for 30 minutes or until completely cooked throughout (flip every 10 minutes).


Lemon-Garlic Hummus:
  • 1 can chickpeas (drained)
  • 1/3 cup tahini
  • 2 garlic cloves
  • 1 lemon (juice)
  • 1 tsp cumin
  • 3-4 tbs water
  • Salt to taste
Place items in food processor or blender, and adjust to taste. You may want to add excess water if you find it to be too thick.


Instructions:

  1. Smooth a layer of hummus onto the flatbread, kind of like pizza sauce.
  2. Blanch a handful of spinach in boiling water for 5 minutes, refresh in a bowl of ice water, dry on a paper towel, and layer on top of the hummus.
  3. Slice feta cheese and place on top of spinach. Slice or shred chicken to your liking and add as well.
  4. Garnish with excess peri-peri sauce, olive oil, or both. Add chopped cilantro, red pepper flakes and drizzle lime juice on top (it really adds another dimension of flavor), and enjoy!



This is definitely a top contender for my favorite recipe ever. Yes, it does take a little bit of time, but believe me, it's all worth it in the end. 

Those Brits weren't lying when they say how delicious this chicken is. I think I'll make it once or twice a week now!
